Kaluga is the great freshwater rarity of the house. Drawn from the Kaluga sturgeon (Huso dauricus), a giant of the Amur river, its large, glossy pearls shift from dark olive and bronze to grey-green and light brown, breaking with a luxurious, creamy burst.

The flavour is generous and refined at once: rich and buttery, with sweet cream, walnut and a soft umami depth that resolves into a clean, mineral finish. Cured in the malossol tradition and graded tin by tin by our caviar master, every tin travels to your table under an unbroken cold chain.

Kaluga loves fine company. Serve it chilled over ice, from a mother-of-pearl spoon, with lobster, king crab or scallops — or simply with warm brioche and a glass of Champagne.
