Beluga is the rarest expression of the house. Drawn from the Beluga sturgeon (Huso huso), a fish that yields its roe only after eight to twelve years, its pearls are unusually large and tender, their colour shifting from pale silver to soft anthracite grey.
The taste is famously delicate: buttery, quietly oceanic, with a finish that lingers rather than declares itself. Cured malossol and graded individually by our caviar master, each tin is a genuine rarity, allocated in small numbers and shipped under an unbroken cold chain.
Beluga deserves nothing between you and the pearl: serve it alone, chilled over ice, from a mother-of-pearl spoon. A vintage Champagne or a well-chilled vodka is the only company it needs.
